Ingredients:

4 crabs
1 carrot
5 sprigs of parsley
3 sprigs of thyme
1 chopped onions
3 cloves
3 shallots
3 cloves of garlic
2 red peppers
5 feet of cive
1 lime
4 slices of bread
120g bacon
1 small glass of milk
4 tbsps olive oil
1 small glass of aged rum (optional)
1 pinch of salt and pepper
2 pinches of breadcrumbs

Direction:

  1. Carefully brush and rinse the crabs. Cook them for 15 minutes on a low boil with the carrot cut into sections, the parsley, the thyme, and the onion.
  2. Shell and reserve the flesh.
  3. To prepare the stuffing: finely chop the bacon, chives, shallots, garlic, peppers, and parsley. Fry everything in a pan with oil.
  4. Add the crab meat in pieces and cook for 2 minutes.
  5. Add the bread soaked in milk and crumbled lemon juice, and the rum. Add salt, and pepper and mix well.
  6. Preheat the oven to 240°C.
  7. Garnish the emptied and cleaned crab shells with the stuffing, sprinkle with breadcrumbs and bake for ten minutes.
